"Green" Eggs For One, Hold The Ham


The bowl of cereal I eat every morning may be fast and easy to make, but by mid-morning I've paid for the convienence with an empty stomach. I want a breakfast that just as easy, but will stick to my ribs.
That's why I was excited to find this recipe for scrambled eggs done in the microwave. Basically you mix one egg, a little milk and a teaspoon of butter in a Pyrex measuring cup and zap it for 45 seconds to one minute. When I pulled the cup out of the microwave, I had a perfectly cooked scrambled egg.
This is a "green" egg because microwave cooking is more energy efficient than frying an egg on a stove. According to a study done by the Rocky Mountain Institute, cooking a meal in a frying pan on a stove for one hour used 0.9 kilowatts of energy. The same amount of food cooked on "high" in the microwave for 15 minutes used 0.36 kilowatts of energy.

That's a fantastic idea. I sort of have a similar problem with my breakfast. I eat oatmeal every morning, and even though I bulk it up with granola, my stomach feels empty a few hours later. Maybe I'll bring some eggs to work to zap them in the morning, too! Great idea :o)

I have never tried cooking eggs in the microwave, even though I have a friend who swears by it! Maybe I should try it. I read in the book It's Easy Being Green that a microwave can be considered a "green" appliance because it is much more efficient than the stovetop or oven.

I know some people are afraid of the microwave . . . radiation, zapping nutrients, maybe some other issues. I have never really understood what those were all about. (Nor have I bothered looking it up!) I lived without a microwave for many years, but when my husband and I moved in together, he bought one within the first week. I use it fairly often now.

I have these plastic(?) things for making poached eggs that work in the microwave. They are soooo cool. Like 2 minutes and they're done. And I don't have to boil any water or anything.

Excellent post! I've also found that using a toaster oven, a crock pot and other small appliances are far more energy efficient than using the stove or oven. Recently I've also tried to do all my baking at once so that I don't have the oven on every night. It's a lot of work but so nice to get it all done at once.
